Eggplant “Caviar” - Russian Appetizer Recipe

How to Cook & Prepare Eggplant “Caviar”:

300 g eggplant 1 tomato
1-2 onions Salt, pepper
2 tblsps vegetable oil vinegar

Bake or boil the eggplant. Peel and chop fine. Add the tomato and slightly browned fried onion. Salt, pepper, oil and vinegar to taste. Mic thoroughly, warm over low heat to eliminate any extra moisture. Chill before serving.
