How to Cook & Prepare Forcemeat cakes in sour cream:

Prepare the meat as directed in the recipe for forcemeat cutlets (see p.101), shape into round cakes 3 to 4 cm in diameter. Dredge with flour and fry in a deep skillet. Pour sour cream over and simmer for 5 to 7 minutes Before serving pour over the sauce and sprinkle with finely minced greens.
