Fried Fish in Marinade - Russian Appetizer Recipe

How to Cook & Prepare Fried Fish in Marinade:

 

5oo g sturgeon, 300 g marinade (see below)
zander, pike, smelt,
navage or cood 50 g green parsley or
1 tblsp flour dill
1 tblsp vegetable oil

Prepare one of these or another similar fish as directed in the section “Fish” Cut large fish into portions of the desired size; small fish can be marinated whole. Slash the skin, sprinkle with salt and pepper, then roll in flour. Fry in hot pepper, then roll in flour. Fry in hot vegetable oil until golden brown then bake until tender. Chill and pour over marinade. Set aside in refrigerator for 2-3 hours. Before serving sprinkle with parsley or dill

Marinade
150 g carrots 2-3 cloves
20 g parsley root 1 piece stick cinnamon
100 g onion or leeks ½ cupful weak (3 o/o)
2 ½ tblsps vegetable vinegar
oil (40 g) 8 peppercorns
5 tblsps tomato puree 1 tbslp sugar
4 bay leaves salt to taste

Scrape and wash the carrots and parsley, clean, the onions then slice or shred them. Saute slightly in vegetable oil for 10 to 15 minutes. Add tomato puree fand spices, cover and sauté for 10 to 15 minutes. Pour in vinegar and fish liquor, add salt and condiment and boil for 10 minutes longer. Chill, remove the bay leaves
