Mushroom vinegret - Russian Appetizer Recipe

How to Cook & Prepare Mushroom vinegret:

Add to the above recipe 100 g any kind of pickled mushrooms (see p.180)

Russian Herring Salad

1 medium-sized herring 1 or 2 hard-cooked
2 boiled potatoes eggs
1 apple 3 tblsps salad oil
1 pickled cucumber 2 tblsps vinegar
1 onion 1 tsp mustard
1 boiled beetroot Parsley or dill

Clean, bone and dice the herring. Thinly slice the vegetables and apple. To make the dressing mash the egg yolk with a fork, add to it salt and mustard, gradually stir in oil enough to make a thick paste and then add the vinegar. Combine the salad and dressing, add the minced onion and parsley or dill. Garnish with slices of beet, pieces of herring and chopped egg whites.
