Red cabbage salad - Russian Appetizer Recipe

How to Cook & Prepare Red cabbage salad:

500 g red cabbage 1 tsp salt
¼ cupful vinegar 1 tblsp salad oil
½ tblsp sugar (optional)

Wash and clean the cabbage; cut into four parts, remove the runt; shred with a sharp knife or shredder.Pour over boiling-hot water, cover and let stand for 20-30 minutes. Drain in a colander, Pour cold water over the cabbage, drain again and squeeze. Transfer into a salad bowl and moisten with vinegar. Add sugar and salt to taste, toss and set aside for 20-30 minutes. If desired, pour over salad oil and toss again. Serve with meat, wild fowl, poultry or fish.

Follow the directions given for the previous salad. Instead of pouring over boiing-hot water, salt the cabbage lightly and rub it until soft and a dark juice appears; squeeze and drain. Pour over vinegar, add sugar and toss. In a few minutes the cabbage will become bright. Serve with meat, wild fowl, poultry or fish.
