Blinchiki with Cottage Cheese, Apple or Other Filling - Russian Bread

How to Cook & Prepare Blinchiki with Cottage Cheese, Apple
or Other Filling:
250 g flour 1 tblsp boiled butter
2 ½ cupsful milk or margarine (to oil
3 eggs griddle)
¼ tsp salt ½ tblsp sugar
Beat the eggs, add salt, sugar and ½ cupful of milk. Stir in the
flour and beat the batter until smooth. Then add the rest of the milk.
Heat a medium-sized griddle and oil it with butter or a piece of pork.
Ladle the batter with a spoon and turn the griddle so that the batter
spreads evenly. Brown on one side only; sprinkle with dry bread crumbs
and stack on a plate or board. When all the pancakes have been cooked,
spread them out browned side up and out browned side up and put a tablespoonful
of filling on each. Fold the thin pancakes like an envelope and brown
it in a buttered frying pan. If served with cottage cheese or apple filling,
the blinchiki may be dusted with powdered sugar. Blinchiki with a meat
filling may be served with sour cream or tomato sauce.
