Curd Pie(Vatrushka) - Russian Bread and Pies Recipe
How to Cook & Prepare Curd Pie(Vatrushka) :

Make an yeast dough (see p.149), divide into pieces, roll them into balls,
put them on a buttered baking pan 2-3 cm (about an inch) apart and set
aside in a warm place. When the balls rise, make a depression in each
with the bottom of a small glass and fill it with curd (cottage cheese).
Brush the vatrushka with egg and bake for 10-15 minutes.
These pies may also be filled with fresh berries or jam. If fresh berries
like strawberries, wild strawberries and raspberries are used, put them
into the depression, sprinkle with sugar and brush the edges of the dough
with egg.

Make a shortcake dough (see p.149), roll it out ½ cm thick, cut
round cakes 5-6 cm across, knead the trimmings, roll and cut. Put cottage
cheese (curds) or berries in the centre of each cake, pinch the edges
but leave the centre open. Put the cakes on a baking pan or sheet, brush
with egg and bake in a hot oven for 10-15 minutes.
