Cut the boned fillet of pike, zander, catfish or carp into small ieces. Dredge with salt and pepper and sauté in butter. Combine with sautéed minced onion and dill and mix thoroughly. Chopped hard-cooked egg may be added. Fish and Rice Cut the fillet into small pieces and sauté in 1 to1 ½ tblsps butter. Boil and drain the rice thoroughly. Add the rice, boiled butter and minced dill or parsley to the fish. Season with salt and pepper to taste. This recipe may be varied by substituting cooked fish.
