Fish and Rice - Russian Bread and Pies Recipe

How to Cook & Prepare Fish and Rice:

Fish


750 g fish (500 g fillet) minced dill
2 tblsps butter hard-cooked egg
1 or 2 onions (optional)
salt, pepper

Cut the boned fillet of pike, zander, catfish or carp into small ieces. Dredge with salt and pepper and sauté in butter. Combine with sautéed minced onion and dill and mix thoroughly. Chopped hard-cooked egg may be added.

Fish and Rice
300 g fillet of fish salt, pepper
¾ cupful rice minced dill or parsley
2or 3 tblsps butter

Cut the fillet into small pieces and sauté in 1 to1 ½ tblsps butter. Boil and drain the rice thoroughly. Add the rice, boiled butter and minced dill or parsley to the fish. Season with salt and pepper to taste.

This recipe may be varied by substituting cooked fish. If desired, minced sautéed onion may be added.
