Straight Dough - Russian Bread and Pies Recipe
How to Cook & Prepare Straight Dough:
1 kg flour 2-4 tblsps butter
30-40 g yeast (margarine)
2 cupsful milk (or 1 tblsp sugar
water) 1 tsp salt
A straight dough is one in which the ingredients are all blended at one
time, kneaded and set aside to rise.
Rub the yeast and sugar together with the back of a spoon until the yeast
becomes liquefied. Stir in the uke warm liquid and beaten eggs. Add flour
and salt which have been sifted together and knead until smooth. Add the
butter (margarine) last and knead until smooth and elastic. Set aside
to rise in a warm place; 2 ½ to 3 hours will be sufficient time.
This will yield dough for 38-40 pirozhki.
