Viziga - Russian Bread and Pies Recipe

How to Cook & Prepare Viziga:

100 g viziga 3 or 4 eggs
2 or 3 tblsps butter salt, pepper
Boiled rice (optional) Minced parsley or dill

Soak the viziga in cold water for 2 or 3 hours. Wash, add fresh water to cover and cook for 3 to 3 ½ hours. When tender, drain thoroughly in a a colander. Put the viziga through the food chopper or mince it with a sharp knife. Add boiled butter, chopped hard-cooked eggs and minced parsley or dill. Season with salt and pepper to taste and mix thoroughly. If desired, boiled rice, small pieces of fish and minced onion sautéed in butter may be added.
