Suet: 2 ½ cuspful barley 100 g raw pork or Prepare the barley porridge according to the directions in the preceding recipe. Put the suet through the food chopper or cut up fine with a knife. Render until the cracklings are browned. Add the rendered fat and cracklings to the porridge, mix and keep it on the hob to steam for 30 to 40 minutes. Pearl Barley Kasha with Butter Pour the barley into boiling water and boil for 5 minutes. Drain the
barley thoroughly in a sieve. Put 3 ½ cuspful of water in the upper
part of a double-boiler, add one tablespoonful of butter and salt. Bring
to a boil. Pour in the cereal and cook until it thickens. Set it over
the lower part of the double-boiler or on the hob to steam for 1 ½
hours. When the kasha is done, mix in 1 or 2 tablespoonsful of butter.
