Buckwheat Cakes - Russian Cereals & Puddings Recipe

How to Cook & Prepare Buckwheat Cakes:

1 cupful buckwheat ½ cupful bread
groats crumbs
100 g curds or cottage ½ tsp salt
cheese 2 tblsps butter
1 tsp sugar 2 eggs

Add salt to 1 ½ cuspful of water and bring to a boil. Add the cereal and cook for 30 to 35 minutes. When the cereal thickens, add the curds which have been pressed through a strainer or put through a food chopper, eggs and sugar; mix thoroughly. Shape into cakes. Dip in bread crumbs and fry till brown. Serve garnished with sour cream. Without sour cream these cakes may be served with borshch or rassolnik.
