Buckwheat kasha with Pluck - Russian Cereals & Puddings Recipe

How to Cook & Prepare Buckwheat kasha with Pluck:

2 ½ cupsful buckwheat 1 tsp salt
groats 2 or 3 tblsps butter
300 g lungs pepper
1 or 2 onions

Prepare the kasha as directed above. Wash the pluck, cover with cold water, add salt and simmer until tender (1 to 1 ½ h). Cool the pluck and put through a food chopper or cut it up finely with a knife. Slice and sauté the onion in butter. Add 1 or 2 tablespoonsful of butter (additional) and the minced pluck. Season with salt and pepper to taste. After frying the pluck and onions, mix with the hot buckwheat kasha.
