Millet Cakes - Russian Cereals & Puddings Recipe

How to Cook & Prepare Millet Cakes:

2 cupsful millet ½ cupful bread
5 cupsful water or milk crumbs
1 tblsp sugar 2 or 3 tblsps butter
1 tsp salt

Add salt, sugar and washed millet to boiling water (or milk). Cook for 15 to 20 minutes stirring constantly. Cover tightly and steam fro 25 to 30 minutes, then cool. When cool enough to handle, wet the palms of your hands in cold wter and shape the coked millet into round cakes. Dip in bread crumbs or flour and fry in butter. Serve with kissel, sour cream, butter or milk sauce.
