Cottage Cheese Filling - Russian Diary Recipe

How to Cook & Prepare Cottage Cheese Filling:

Rub the cottage cheese through a sieve, add beaten egg yolk, sugar, ½ tsp salt, a little grated lemon or orange rind and 1 tblsp boiled butter. Blend the ingredients thoroughly. Raisins may be added.

Put a heaping tablespoonful of cottage cheese mixture on the browned side of the pancake and fold up like and envelope. Brush with egg white the edge of the pancake folded last; this will prevent it from unwrapping in the frying pan. Brown evenly in butter. Dredge with powdered sugar and serve hot. Pass sour cream in sauceboat
