Sweet Cheese Paste - Russian Diary Recipe

How to Cook & Prepare Sweet Cheese Paste:

500 g cottage cheese ¼ tsp salt
or curds Fresh or fresh-frozen
100 g butter berries (optional)
3 tblsps sour cream roasted almonds or
1 cupful sugar pistachio nuts
½ vanilla powder (optional)

Cream the butter until light and fluffy. Add the sugar, vanilla and salt and blend. Gradually add and mix thoroughly the cottage cheese which has been rubbed through a sieve and the sour cream. When the paste is smooth, heap it on a plate and smoothen with a knife. Garnish with fresh or fresh-frozen berries, chopped roasted almonds or pistachio nuts. Chill before serving. If desired, any of the following may be added: 1 tblsp cocoa or powdered chocolate, 1 tsp cinnamon, finely shredded candied fruit or raisins.
