2 cupsful flour 500 g cottage cheese Beat one egg in a mixing bowl. Add 1 tblsp sugar, 1/3 tsp salt and 1 cupful of cold milk and blend. Gradually add the sifted flour and mix with a wooden paddle till smooth. Stir in the remaining milk and beat vigorously. Pour just enough batter onto a well-heated greased griddle or frying pan to make a thin pancake. Cook over medium heat. Brown on one side only. Quickly grease the pan and pour the batter for the next pancake. Blinchiki must be very thin. If they are thick, thin the batter with a little milk.
