Thin Pancakes with Cottage Cheese - Russian Diary Recipe

How to Cook & Prepare Thin Pancakes with Cottage Cheese:

2 cupsful flour 500 g cottage cheese
3 cupsful milk ¾ cupful sour cream
2 eggs 2 tblsps butter
¾ cupful sugar salt

Beat one egg in a mixing bowl. Add 1 tblsp sugar, 1/3 tsp salt and 1 cupful of cold milk and blend. Gradually add the sifted flour and mix with a wooden paddle till smooth. Stir in the remaining milk and beat vigorously. Pour just enough batter onto a well-heated greased griddle or frying pan to make a thin pancake. Cook over medium heat. Brown on one side only. Quickly grease the pan and pour the batter for the next pancake. Blinchiki must be very thin. If they are thick, thin the batter with a little milk.
