Pass the cottage cheese through a food chopper or rub through a sieve. Add beaten eggs, sugar, 1 tblsp melted butter and salt. Mix thoroughly. Work in the sifted flour and knead. Transfer to a floured dough board and divide into four parts. Shape each piece into a long sausage-like roll, flatten slightly and slice off wedge-shaped pieces about ½ cm thick. Lay in boiling salt water and cook until the galushki rise to the top. Drain and serve hot with boiled butter poured over and sprinkled with browned bread crumbs. Serve with sour cream. Galushki may be browned in the oven. For this they should be poured over with sour cream and dotted with butter.
