Sour Cherry Kissel - Russian Desserts Recipe

How to Cook & Prepare Sour Cherry Kissel:

1 cupful sour cherries 2 tblsps potato flour
¾ cupful sugar

Wash the cherries in cold water, stone them, dredge with sugar and set aside for half an hour. Stir them several times. Pour off the juice. Crush the cherry stones and boil in 2 ½ cupsful of hot water. Strain the liquor over the cherries and bring to a boil again. Stir in the dissolved potato flour and bring to a boil again. Remove from the heat. Stir in the cherry juice and blend.
