Preparation of Russian Fish Recipes

Fish and other Sea foods can be cooked in a variety of ways

Live, fresh, frozen or salt fish and ready-to-cook or ready-to-eat fish products are all easily available. Fresh frozen fillet of carp, zander, codfish, bream and other fish can be purchased in the shops. This is a great time saver and simplifies cooking immeasurebaly.

Thaw frozen fish or fillets in cold water so that it does not dry. After thawing wash in fresh water.

Soak salt fish in cold water to cover for 30 to 40 minutes. Remove the scales, cut the fish and then soak again for 4 to 6 hours, depending on the saltiness. Change the water every hour or two.

Fish stews

Fish stew is usually made with sautéed fish but stew may be made with raw or stuffed fish. The fish is cut into portions and braised with savoury vegetables, tomato paste or fresh tomatoes, green pepper, sorrel, milk and onion, and a variety of other ingredients.

Fried Fish

Fish steaks for pan or deep frying should be cut no more than 3 cm thick; fry small fish whole. Before frying soak the steaks in milk to which salt and a dash of pepper have been added (1/4 cupful of milk, ½ tsp salt) for 15 to 20 minutes; then dredge with flour or bread crumbs.
