Baked Sturgeon - Russian Fish & Seafood RecipeHow to Cook & Prepare Baked Sturgeon: 500 g sturgeon 1 tblsp butter Wash the sturgeon; do not cut into pieces. Remove the cartilage and bone
like scales. Sprinkle with salt and pepper. Lay the fish in buttered pan.
Brush with sour cream and dot with butter. Pour ½ cupful of water
into the bottom of the pan and bake for 25 to 30 minutes basting several
times with the pan juice. Before serving. Cut the fish into pieces crosswise
and serve on a heated platter. Pour over the strained pan juice. Decorate
with parsley greens. Garnish with buttered boiled potatoes or fried potatoes,
a vegetable salad, cucumbers and slices of lemon. Pass mayonnaise and
capers sauce
