Broiled sprats - Russian Fish & Seafood RecipeHow to Cook & Prepare Broiled sprats: 600 g sprats Clean the sprats. Remove the intestines and gills; leave the head. Wash
and dry with a cloth. Brush with oil. Put the fish on a hot grate over
charcoals. Turn to brown evenly. Sprats may also be broiled strung on
a wire by the head and hung over hot charcoals. When done, dip the sprats
into hot salt water (120 g salt per litre of water) for a few seconds.
Serve with fried potatoes.
