flour. Dip into beaten egg which has been combined with milk, salt and
pepper. Roll in dried bread crumbs and shake off any that do not adhere.
Fry in deep fat till golden brown. Garnish with lemon and serve with fried
potatoes. Instead of the lemon, tomato sauce or mayonnaise and gherkins
may be served separately. Fried halibutCut the halibut into portions. Dampen with vinegar, sprinkle with salt
and pepper and set aside for 2 hours. Roll in flour as directed in the
above recipes and fry.
