Deep fried floured anchovies - Russian Fish & Seafood Recipe

How to Cook & Prepare Deep fried floured anchovies:

400 g anchovies fat for deep frying
40 g flour salt

Prepare the fish as directed in the recipe for sprats fried with onion. Heat the fat to 160-170*C. Roll the fish in the flour. Fry over high heat for 5 to 6 minutes then drain in a wire strainer. Serve immediately. Garnish with beans in tomato sauce or fried potatoes. Sauerkraut or pickled vegetables may be passed (beets, cabbage, tomatoes, watermelon, etc.).

Deep fried floured sardelles, sprats or sparlings (smelts)

Substitute any of these fish for anchovies in the above recipe.
