Fish Fried in Batter - Russian Fish & Seafood Recipe

How to Cook & Prepare Fish Fried in Batter:

500 g filleted fish 3 tblsps vegetable oil
2 eggs Juice of ½ lemon
½ cupful milk or salt, pepper
water fat for frying
5 tblsps flour minced parsley or dill

In a bowl sift together flour and salt. Combine with 2 tblsps oil or melted butter, stir in water and mix until smooth. Cover the batter and set aside.
Cut the fillet into pieces 1 cm thick and 5 to 7 cm long. Sprinkle with salt, pepper and minced parsley (or dill); pour over the lemon juice and 1 tblsp oil, mix and set aside for about ½ hour to marinate.

Ten to fifteen minutes before service, beat the egg whites stiff and fold into the batter. Dip each piece of fish in the batter and fry in enough hot fat to completely cover the fish. When brown on both sides, remove to a rack to drain. Serve on a paper napkin. Decorate with parsely greens and lemon slices. Pass mayonnaise and gherkin sauce or hot tomato sauce separately. Garnish with salad or buttered boiled potatoes.
