set aside. Ten to fifteen minutes before service, beat the egg whites stiff and fold into the batter. Dip each piece of fish in the batter and fry in enough hot fat to completely cover the fish. When brown on both sides, remove to a rack to drain. Serve on a paper napkin. Decorate with parsely greens and lemon slices. Pass mayonnaise and gherkin sauce or hot tomato sauce separately.
