Fish cutlets or patties. - Russian Fish & Seafood Recipe

How to Cook & Prepare Fish cutlets or patties.:

500 g fillet of zander, 3 tblsps dried bread
pike or cod crumbs
125 g day-old white 4 tblsps vegetable oil
bread 4 tblsps butter
½ cupful milk 1/8 tsp pepper
50 g onion (optional)

Grind the skinned and boned fillet. Mix with bread which has been soaked in milk and squeezed dry, add salt and pepper and if desired, minced onion. Put through the mincer again once or twice. Cream the butter and combine thoroughly with the mixture. Shape into cutlets or round patties and roll or dust with bread crumbs. Fry in oil for 10-15 minutes or until golden brown on both sides then bake for 5-7 minutes in a hot oven. Serve on a hot platter. Garnish with buttered or creamed peas, beans, cauliflower or any other vegetable. Pass tomato, red or sour cream sauce with tomato paste and onion.
