Herring in tomato sauce with pickled cucumbers - Russian Fish & Seafood Recipe

How to Cook & Prepare Herring in tomato sauce with pickled cucumbers:

500 g fresh herring 400 g stock
120 g pickled 20 g flour
cucumbers 40 g butter
60 g tomato puree or minced parsley
300 g fresh tomatoes

Bone the portions of filleted herring and arrange in one layer in a buttered casserole. Add thinly sliced pickles, tomato puree or fresh tomatoes (peeled, seeded and cut into small pieces). Add fish stock to cover just half the fish. Cover with a lid and simmer for 25 to 30 minutes. Carefully drain off the stock or transfer the fish to another saucepan. Make a sauce by gradually adding to the stock the flour which has been combined with an equal amount of butter. Stirring continuously, heat until the sauce thickens. Add salt, pepper and butter to taste. Strain, pour over the fish, bring to the boil. Serve together with the pickle and the sauce poured over. Garnish with boiled potatoes. Sprinkle with minced parsley.
