Skewered sturgeon - Russian Fish & Seafood RecipeHow to Cook & Prepare Skewered sturgeon: Cut the sturgeon into 40- to 50-g pieces. Wash in cold water and dredge with salt and pepper. Thread the pieces of sturgeon onto a metal skewer and broil over red hot coals for 6 to 10 minutes. Baste with butter. Turn so as to brown evenly. Remove from the skewer onto a hot plate, garnish with broiled tomatoes, onions and green onions and parsley. Skewered Salmon Substitute salmon in the above recipe
