Sole or Halibut Baked in Milk Sauce - Russian Fish & Seafood Recipe

How to Cook & Prepare Sole or Halibut Baked in Milk Sauce:

600 g sole or halibut 40 g crabmeat
20 g onion 4 oysters
20 g parsley 400 g milk sauce
40 g dry white wine 4 egg yolks
60 g mushrooms 40 g butter
25 g cheese

Steam the fish in a stock to which the white wine, parsley and onion have been added Lay the fish on a platter and garnish with cooked mushrooms, crabmeat and oysters. Add the fish liquor to the milk sauce, bring to a boil and remove from the heat. Add the raw egg yolk and mix. Taste to correct seasoning. Pour the sauce over the fish. Sprinkle with grated cheese and butter. Brown in a hot oven and serve immediately.
