Sole in Red wine - Russian Fish & Seafood RecipeHow to Cook & Prepare Sole in Red wine: 500-750 g sole 1 onion Wash, clean and slice the parsley and onion. Put them in saucepan; add
the cloves, a dash of pepper and a bay leaf. Put in the pieces of fish,
add salt, the wine and a cupful of stock (or water). Cover and simmer
for 15 to 20 minutes. When the fish is tender, drain the stock into another
saucepan and make a sauce as directed in the recipe for steamed sturgeon
(see p.77). Serve garnished with whole boiled potatoes. Pour over the
