Sole in Red wine - Russian Fish & Seafood Recipe

How to Cook & Prepare Sole in Red wine:

500-750 g sole 1 onion
1 cupful red table wine 2 tblsps butter
1 tblsp flour 4 cloves
800 g potatoes bay leaf
1 parsley root salt, pepper

Wash, clean and slice the parsley and onion. Put them in saucepan; add the cloves, a dash of pepper and a bay leaf. Put in the pieces of fish, add salt, the wine and a cupful of stock (or water). Cover and simmer for 15 to 20 minutes. When the fish is tender, drain the stock into another saucepan and make a sauce as directed in the recipe for steamed sturgeon (see p.77). Serve garnished with whole boiled potatoes. Pour over the strained sauce.

Zander, pike or eels in red wine
Substitute any of these fish in the above recipe.
