Sole or halibut fried with onions, mushrooms and gherkins - Russian Fish & Seafood Recipe

How to Cook & Prepare Sole or halibut fried with onions, mushrooms and gherkins:

600 g sole or halibut 30 g onion
25 g flour 20 g gherkins
100 g boiled butter 30 g mushrooms
or vegetable oil salt, pepper
15 g butter minced parsley

Chop the onion and mushrooms fine and slightly sauté each separately in the boiled butter or vegetable oil. Sprinkle the fish with salt and pepper, roll in flour and fry. Serve on sautéed onin. Garnish with boiled potatoes. Shoestring the gherkins and add to the mushrooms. Brown slightly in butter. While hot, spread over the fish. Sprinkle with the minced parsley.
