mushrooms and gherkins: 600 g sole or halibut 30 g onion Chop the onion and mushrooms fine and slightly sauté each separately
in the boiled butter or vegetable oil. Sprinkle the fish with salt and
pepper, roll in flour and fry. Serve on sautéed onin. Garnish with
boiled potatoes. Shoestring the gherkins and add to the mushrooms. Brown
slightly in butter. While hot, spread over the fish. Sprinkle with the
minced parsley.
