Sole or halibut with apples and leeks - Russian Fish & Seafood RecipeHow to Cook & Prepare Sole or halibut with apples and leeks: 600 g sole or halibut 200 g sour cream or Pare and slice the apples (antonovka or any other tart apples), slice
the white part of the leek. Put them in a buttered saucepan. Lay the pieces
of fish on top. Sprinkle with salt and pepper. Pour in a little stock
and add white wine. Steam, basting from time to time. When tender, remove
the fish. Boil the stock until one half remains. Add to it the sour cream
or butter. Salt to taste. Pour over the fish.
