Sole stewed with onion and green peppers - Russian Fish & Seafood RecipeHow to Cook & Prepare Sole stewed with onion and green peppers: 500 g sole 600 g fish stock Shred the onion and sauté in vegetable oil. Add the peppers which have been seeded and cut into strips. Saute 5-10 minutes. Add the peeled, cut and seeded tomatoes. Pour in the fish stock and bring to the boil. Cut the fish into portions, sprinkle with salt and pepper and dredge with four. Saute the fish and then lay in the stock and vegetables. Add the garlic which has been crushed and rubbed together with salt, parsley and celery. Simmer for 15 minutes. Serve with a garnishing of boiled potatoes; pour over pan sauce and sprinkle with the minced herbs. Lemon rind may be substituted for onion. Shred the rind, scald it and
sauté in vegetable oil.
