Sprats in sorrel sauce - Russian Fish & Seafood Recipe

How to Cook & Prepare Sprats in sorrel sauce:

500 g sprats 250 g sorrel
25 g flour 20 g parsley greens
80 g vegetable oil or dill
100 g onion 20 g garlic
60 g tomato puree or 200 g fish stock
300 g fresh tomatoes salt

Prepare the sprats. Dredge with flour and sauté in oil. Lay one deep in a saucepan. Pour sorrel sauce over and braise for 40 to 50 minutes. Garnish with boiled or fried potatoes sprinkled with finely minced dill or parsley.

Sorrel sauce

Add slightly browned onion, tomato uree, stemmed sorrel leaves, green parsley and the garlic (crushed and rubbed with salt) to the water or fish stock. Bring to the boil and simmer for 10 to 15 minutes.
