Steamed fish patties - Russian Fish & Seafood Recipe

How to Cook & Prepare Steamed fish patties:


750 g fish or 500 g 200 g fresh mushrooms
filleted fish 1 cupful white table
300 g string beans wine
100 g white bread 1 egg
(without crust) 4 tblsps butter
½ cupful milk salt to taste

Prepare fish forcemeat (preferable zander, pike, burbot, catfish or cod) as directed in the recipe for fish cutlets (see p.78). Shape into round patties and lay in a single layer in a buttered saucepan. Put the cut mushrooms into the spaces between the patties. Sprinkle with butter, pour in the white wine and add stock (made of fish bones) to cover ¾ of the patties. Cover the saucepan with a lid and simmer for 15 to 20 minutes. When done, drain the stock into another saucepan and make a white wine sauce (see p. 88). Separately cook the string beans and season with butter; salt to taste. Serve the patties with mushrooms. Garnish with string beans; pour over the sauce.
