Steamed fish patties - Russian Fish & Seafood RecipeHow to Cook & Prepare Steamed fish patties:
Prepare fish forcemeat (preferable zander, pike, burbot, catfish or cod)
as directed in the recipe for fish cutlets (see p.78). Shape into round
patties and lay in a single layer in a buttered saucepan. Put the cut
mushrooms into the spaces between the patties. Sprinkle with butter, pour
in the white wine and add stock (made of fish bones) to cover ¾
of the patties. Cover the saucepan with a lid and simmer for 15 to 20
minutes. When done, drain the stock into another saucepan and make a white
wine sauce (see p. 88). Separately cook the string beans and season with
butter; salt to taste. Serve the patties with mushrooms. Garnish with
string beans; pour over the sauce.
