Steamed sprat pudding - Russian Fish & Seafood RecipeHow to Cook & Prepare Steamed sprat pudding: 400 g filleted sprats 60 g sour cream Put the filleted sprats (boned) through the mincer together with the
bread which has been soaked in milk and squeezed dry. Add the egg yolk,
salt, pepper and sour cream. Mix thoroughly. Fold in the egg white beaten
stiff. Transfer to a buttered mould, set in a water bath and cover. Bring
the water to the boil and cook for 35 to 40 minutes. Unmould and cut into
portions. Serve with melted butter or tomato sauce poured over. Tomato
sauce may be passed separately.
