Stuffed fish Cutlets in Don Manner - Russian Fish & Seafood Recipe

How to Cook & Prepare Stuffed fish Cutlets in Don Manner:

500 g sea bass Pepper
120 g mushrooms Greens
120 g onion 40 g vegetable fat
400 g sauce

Cut the filleted fish (skinned and boned into rectangular pieces (2 pieces per portion) and pound slightly with a chopper. Put some stuffing (see below) on each piece of fish, fold over and shape into a cutlet. Lay the cutlets in a buttered casserole overlapping side down. Add stock, cover with a lid and simmer over low heat. Before serving pour over white wine sauce (see p.88) or tomato sauce with mushrooms. Serve with a garnishing of boiled potatoes.

Stuffing
Finely chop the mushrooms and fish trimmings. Saute slightly together with the minced green parsley and onion. Season with salt and pepper.

Stuffed salmon or sole cutlets/

Substitute salmon or sole in the above recipe.
