Stuffed fish Cutlets in Don Manner - Russian Fish & Seafood RecipeHow to Cook & Prepare Stuffed fish Cutlets in Don Manner: Cut the filleted fish (skinned and boned into rectangular pieces (2 pieces per portion) and pound slightly with a chopper. Put some stuffing (see below) on each piece of fish, fold over and shape into a cutlet. Lay the cutlets in a buttered casserole overlapping side down. Add stock, cover with a lid and simmer over low heat. Before serving pour over white wine sauce (see p.88) or tomato sauce with mushrooms. Serve with a garnishing of boiled potatoes. Stuffing Stuffed salmon or sole cutlets/ Substitute salmon or sole in the above recipe.
