Stuffed sole - Russian Fish & Seafood RecipeHow to Cook & Prepare Stuffed sole: 1 kg sole 1/3 cupful crayfish tails Clean the fish and slit down one side. Prepare the dressing as follows: mix together 2 tblsps butter, 2 tblsps crumbs, parsley, crayfish taisl, slightly beaten egg, dash of grated nutmeg, salt and pepper. Reserve a little egg to brush the fish. Stuff the dressing into the fish beneath the fillet leaving the centre open. Melt the remaining butter in a skillet and put in the fish which has been brushed with egg and sprinkled with dry bread crumbs. Bake in moderate oven 7-10 minutes.
