Zander Baked with Potatoes - Russian Fish & Seafood Recipe

How to Cook & Prepare Zander Baked with Potatoes:

600 g fillet of zander 2 tblsps dry bread
600 g potatoes crumbs
1 tblsp flour 2-3 tblsps butter
Pepper salt

Cut the fish into portions, slit the skin, then sprinkle with pepper and lay in a buttered baking dish. Pare and shoestring the potatoes; wash in cold water, drain and spread over the fish. Line the sides of baking dish with sliced potatoes. Sprinkle with salt and flour. Pour over fish stock or water, sprinkle with dry bread crumbs and melted butter. Bake for 20 35 minutes depending on the thickness of the layer of potatoes. Should the stock evaporate quickly, add more stock or boiled water. A layer of fried onion may be placed between the fish and the potatoes. Before serving sprinkle with minced parsley greens. Garnish with green salad with fruits and vegetables, cucumbers or pickles and sauerkraut.
If desired, sliced boiled potatoes may be used instead of raw potatoes and fish stock sauce used instead of fish stock or water.
