Beef Kidney Stew, Russian Manner - Russian Meat RecipeHow to Cook & Prepare Beef Kidney Stew, Russian Manner: 500 g beef kidneys 2 0r 3 tblsps butter Cut away the fat and membrane, cover with cold water and bring to a boil.
Discard the water, rinse the kidneys, add fresh water and boil. Simmer
until tender (about 1 to 1 ½ hours). Make the sauce by browning
the flour in one tablespoonful of butter. Stir in 1 ½ cupsful of
the hot liquor the kidneys have been cooked in and boil over low heat
for 5 to 10 minutes. Cut the kidneys into pieces and mix with the onions
which have been sautéed. Fry together for 2 or 3 minutes longer
and transfer to a shallow saucepan. Add the potatoes which have been cut
into chunks and fried, separately boiled sliced pickles and seasoning.
Pour over the sauce which has been strained, cover with a lid and braise
for 25 to 30 minutes. Serve on a hot platter with garnishing. Sprinkle
with minced parsley or dill. Stewed Pork KidneysSubstitute pork kidneys in the above recipe but do not boil before frying.
