Boiled Tripe - Russian Meat RecipeHow to Cook & Prepare Boiled Tripe: Wash the tripe thoroughly, scald, scrape with a knife and rinse in cold water. Cut into large squares or roll up and tie with string. Add cold water and bring to a boil. Add salt, pepper, bay leaf, one carrot, one parsley and one onion. Simmer for 4 to 5 hours. Cut the cooked tripe into noodle-like strips. Pour over white stock sauce made with the liquor. If desired, tomato paste may be added to the sauce. Tripe may be served cold; separately pass horseradish and vinegar sauce, cucumbers or pickles, tomato salad or coleslaw. [an error occurred while processing this directive]
