Braised Lung - Russian Meat RecipeHow to Cook & Prepare Braised Lung: Wash the meat and put it in hot water. Simmer for 1 ½ to 2 hours then cut into medium sized pieces. Dredge with salt and pepper and brown in butter. Sprinkle with flour, add the finely chopped onion and fry a few minutes longer. Transfer the meat to a saucepan, add 2 to 2 ½ cupsful of the meat stock, tomato puree and a bay leaf. Cover with a lid and simmer for another 10 to 15 minutes.
