Casserole of Beef
(Zharkoye) - Russian Meat Recipe
How to Cook & PrepareCasserole of Beef (Zharkoye):
600 g beef 60 g tomato puree or
20 g rendered fat 200 g sour cream
400 g potatoes 15 g flour
200 g carrots Bay leaf, pepper
200 g turnips cloves, cinnamon, mint
120 g onion
Cut the meat into portions, pound slightly and sauté together
with onion. Slice the carrots, turnips and potatoes. Put the seared meat
into a stoneware pot or casserole, add the meat juices, a little stock,
seasoning and vegetables. Cover tightly. Braise until done. Drain off
part of the juices, stir into browned flour and pour back into casserole.
Add tomato puree or sour cream. Cook the meat till tender.
