Fried Kidneys - Russian Meat RecipeHow to Cook & Prepare Fried Kidneys: Prepare the veal kidney and dry it with a cloth. Do not remove the fat. Slice into rounds crosswise. Dredge each slice with salt and pepper and flour. Heat butter in a skillet and fry the kidneys on both sides for 5 or 6 minutes. When done sprinkle with minced green parsley, pour over lemon juice and serve in the frying pan. Separately serve fried shoestring or cubed potatoes and quarter pieces of lemon.
