Liver in Sour Cream - Russian Meat Recipe
How to Cook & Prepare Liver in Sour Cream:
500 g beef, lamb or 1 cupful meat stock
pork liver (or water)
½ cupful sour 1 onion
cream 2 tblsps butter
1 tblsp flour salt, pepper
Wash the liver. Remove the skin and any ducts and cut in strips. Season
with salt and pepper, dust with flour and fry in hot butter on both sides.
Put the liver in a casserole. Add sautéed finely sliced onion,
the sour cream pan juices and one cupful of meat stock or water. Cover
with a lid and simmer for 25 to 40 minutes. When the liver is done put
it on a platter. Salt the gravy to taste, pour over liver. Sprinkle with
minced parsley. Serve with a garnishing of fried or boiled potatoes.
