Meat Stew with Sauerkraut - Russian Meat Recipe

How to Cook & Prepare Meat Stew with Sauerkraut:

200 g boiled or 1 kg sauerkraut
canned meat, minced 2 pickled cucumbers
ham or sausage 2 onions
3 tblsps tomato puree vinegar, sugar, salt
1 tblsp bread crumbs bay leaf, pepper
1 tblsp flour ½ cupful meat stock
1 tblsp capers (or water)
2-3 tblsp butter

Add to the sauerkraut 1 tblsp butter and meat stock and braise for 40 minutes. Then add one fried onion, tomato puree, vinegar, sugar, salt, bay leaf and pepper and simmer for another 10 minutes. Stir in the flour which has been browned in butter. Mix and bring to a boil. Cut the meat into small cubes, sauté together with onion to a light yellow, add sliced pickles, capers, and 2 or 3 tblsps meat stock. Cover with a lid and boil for several minutes.

Spread half the prepared sauerkraut in a casserole. Lay the meat and garnishing on it and cover with the remaining sauerkraut. Level and sprinkle with bread crumbs and dot with butter. Bake for 10 to 15 minutes to brown. Garnish with sprigs of parsley, olives or bilberries.
