Shashlyk, Kara Manner - Russian Meat RecipeHow to Cook & Prepare Shashlyk, Kara Manner: Cut the best loin of lamb into 250 g portions, trim and make incisions so that the meat does not gather. Cut the kidneys in half. Put the meat and kidneys in a basin, dredge with salt and pepper, add the finely sliced onion, minced parsley and pour over vinegar (or lemon juice). Mix and set aside to marinate in the refrigerator for 2 to 3 hours. Skewer the piece of lamb putting half a kidney at each end. Grill the shashlyk over charcoal turning frequently till evenly done. Remove from the skewe3r and serve in one portion together with the kidneys. Garnish with sliced lemon. Sprinkle with green onions and minced parsley. Pass Yuzhny sauce.
