Mushrooms with Sauerkraut - Russian Mushroom Recipe

How to Cook & Prepare Mushrooms with Sauerkraut :

(Country Manner)
500 g mushrooms 2 tblsps butter
1 kg sauerkraut 1 bay leaf
1 pickled cucumber salt, pepper
1 onion 2 tblsps tomato puree
1-2 tsps sugar

Add a little water and butter to the sauerkraut and braise for about 45 minutes. Add tomato puree, sugar, pepper, a bay leaf and salt. Braise for another 15 to 20 minutes.

Any of the boletus mushrooms may be used. Wash and cook them in boiling water for 10 to 15 minutes. Drain, slice and sauté in butter. Transfer the mushrooms to a bowl and sauté the onions in the same frying pan. Add the sliced pickle, salt and pepper.

Spread half the braised cabbage in a baking dish, cover with the mushroom mixture and put the remaining cabbage over the mushrooms. Sprinkle with bread crumbs, dot with butter and bake. Before serving, garnish with lemon slices or olives.

This dish may also be made with fresh cabbage, adding vinegar to taste. Pickled or dried mushrooms maly be substituted for fresh mushrooms.
