Armenian Meat Pasties - Russian Pelmeni Recipe

How to Cook & Prepare Armenian Meat Pasties:

250 g beef 1 egg
30 g onion 100 g matsun (sour
20 g boiled butter milk)
100 g flour salt, pepper, parsley
Garlic to taste

Prepare a broth with bones. Put the meat through the grinder twice and add to it sautéed onion, minced parsley and garlic. Sift the flour, make a well, pour into it the beaten egg and water. Quickly make the dough and divide. Roll out rounds 1-2 mm thick. Place 8-10 filling 1-2 cm from the edge. Brush the edge with beaten egg, cover the filling with a round of dough, cut the edges with a round cutter and then pinch them. Drop the pasties into hot broth and boil gently until the pasties rise to the surface. Crush the garlic and mix with the sour milk. Serve the pasties with this mixture poured over. Separately serve the meat broth
