How to Cook & Prepare: Palmeni Fillings :

Cabbage Filling


350 g pork (boned) 180 g cabbage
40 g onion 50 g water
9 g salt Pepper

Trim the meat. Put it through the meat chopper together with the onion. Add salt, pepper, water and finely chopped cabbage. Mix thoroughly.

These pelmeni are made in the eastern areas of Russia. They are shaped as usual or in the form of a “knot”. Serve with butter, butter and vinegar, sour cream of green onions.

Mushroom Filling


150 g boiled rice 50 g butter
40 g dried mushrooms salt
50 g onion

Soak the mushrooms, then cook. Chop up and sauté the mushrooms and add the sautéed onion. Combine with parboiled rice and mix thoroughly. Serve pelmeni garnished with sour cream.

Mushroom and Egg Filling

10 eggs 50 g butter
40 g dried mushrooms salt, pepper
50 g onion

Prepare the mushrooms and onion as directed above. Add chopped hardcooked eggs, salt and pepper. Mix thoroughly. Serve pelmeni garnished with sour cream.

Radish Filling


450 g radishes 50 g butter
50 g onion salt

Peel and shred the radishes on a grater. Saute and add fried onion and salt. Serve pelmeni garnished with sour cream.

Fish Filling

450 g fillet of fish 50 g butter
75 g onion salt, pepper

The fillet of any fish may be used. Put it twice through the food chopper together with the raw onion. Add salt, pepper and butter. Mix thoroughly. Serve pelmeni with butter poured over.

Far Eastern Filling


275 g fillet of fish 1 egg
250 g fat pork 60 g water
50 g onion salt, pepper

Put the fillet of salmon or other fish through the meat chopper twice together with the pork and raw onion. Add the egg, pepper, salt and water and mix thoroughly. Pelmeni made with this filling are cooked or fried in butter. Garnish with butter or vinegar.
